Ingredients:

    * BASIC PORK CHOPS:
  • 4 inches pork center-cut (or loin chops, about 2 pounds (905 g) total, cut 1 1/4 to 1 1/2 (3 to 3.5 cm) thick, trimmed of fat)
  • Salt and pepper
  • * CITRUS PORK CHOPS:
  • 1/3 cup (80 ml) orange marmalade
  • 2 teaspoons soy sauce
  • 1/4 teaspoon ground ginger
  • Basic Pork Chops (see above)
  • * SPICED PORK CHOPS:
  • 1/2 teaspoon paprika
  • 1/4 teaspoon each salt (ground ginger, dried mustard, and pepper)
  • 1 clove garlic (minced or pressed)
  • Basic Pork Chops (see above)
  • 1 tablespoon soy sauce

Directions:

Basic Pork Chops: Season chops to taste with salt and pepper. Arrange in center of cooking grate. Place lid on grill. Cook, turning once halfway through cooking time, until meat near bone is no longer pink (25 to 35 minutes, cut to test).

Citrus Pork Chops: Combine marmalade, soy sauce, and ginger in a small bowl. Follow directions for Basic Pork Chops, omitting salt and pepper, and brushing chops with marmalade mixture about 5 minutes before chops are done.

Spiced Pork Chops: Combine paprika, salt, ginger, mustard, pepper, and garlic in a small bowl. Follow directions for Basic Pork Chops, brushing chops on both sides with soy sauce and patting paprika mixture all over meat, pressing into surface, before grilling. Do not season with additional salt and pepper.

These were the best pork chops I have ever eaten. They were so easy, but elegant! I`ve made them twice. The first time I grilled them, and the second time I broiled them. I like the grilled way better because of the extra flavor I get from the grill. I was concerned about them not getting done or

Made it. Great! Works on boneless chops too, and doesn`t need to sit long if you tenderize the meat. Tastes great on chicken too.
